A new Recipe/Emma uses the Potty and goes to the doctor!!!
Okay, this week I am posting a new recipe. This week has been very mellow compared to last week and for that I'm thankful. We still have no word on Jacob's new job but I will post as soon as we find out. For now, we are watching his vacation time slowly slip away. I just realized last night that Thanksgiving is next Thursday! I am sooooo excited! Thanksgiving is one of my favorite holidays. I am most excited to see all my extended family. I miss them A LOT! We are only 4 hours away but we don't see them as often as I'm used to (I lived in Port Orchard my whole childhood with all my dad's family living within 15 minutes of one another... you do the math).
This Thanksgiving will be the first since my lovely Grandmother died. Do you ever stop missing someone who you've lost? I miss her so much and it's just not going to be the same without her during the holidays. Her strong love of all of us could be felt as soon as we walked through her door. Anyway, forgive me please, I'm a HIGHLY emotional pregnant woman. I actually it's worse this time than with Emma.
Okay, this weeks recipe is what my Grandmother called "Cheesy Potato Bake" known more famously in the LDS culture as "Funeral Potatoes". These potatoes are served for Easter in the Trogdon home but I think they should be eaten with every meal.
2 pounds frozen hash browns, thawed
½ c butter, melted
1 can cream of chicken soup
1 tsp salt
½ medium onion, chopped
1 pint sour cream
10 oz shredded cheddar cheese
½ tsp pepper
Crushed corn flakes
Mix butter, soup, sour cream, onion, salt and pepper.Separate potatoes and add to sour cream mixture.Add cheese.Place in 9x13 pan.Sprinkle top with crushed corn flakes and pour about 2 Tbs. melted butter over the top.Bake at 350˚ F for 1 hour.
Emma used the big girl potty for the first time on Sunday! This was very exciting for us. Emma was very proud of herself and was beeming the whole night. Of course she didn't use the potty yesterday but that fact that she did on Sunday is enough for me! It's exciting to think that Emma is that much closer to being potty trained.
Emma's 2 year check up was yesterday. She is 3' tall which puts her at the 99th percentile for height and she is 28 pounds which puts her in the 63rd percentile for weight. Every doctor's appointment shows the same percentiles so it wasn't a shock for us. She's gained 3 pounds since her 18 month check up. It was also time for her to get her flu shot and she was very brave for it. The nurse was fast so it was over quickly. Emma cried for just a litle while and then she was fine. Such a good girl!
